Aam ki launji  recipes are essential for most of the meals in Indian households. it ranges from the morning breakfast to lunch, dinner.

Aam ki launiji known for its combination of flavors of taste. it is concentrated and hence has a strong flavor of mango sourness, sweetness from the jaggery, spiciness from red chilies and savory from the salt. hence it is also treated as a pickle and served alongside rice and roti meal.

Ingredients-

3-4 raw mango

2 cup grated jiggery

1 tspn saunf

2-3 red chilli

½ tson jeera

½ turmeric powder

½ red chilli powder

½ tspn kalunji

½ tspn hing

Salt to taste

 

Peel the mango and cut it into small pieces.

Heat oil in a pan and add asafetida, cumin seeds, whole red chilli, fennel seeds, nigella seeds and crackle them. Now add chopped mangoes and mix well and stir for 2-3 minutes

Now add turmeric powder, salts, red chilli powder, jaggery and mix. Cook for 2 minutes and then add 1 cup water.

Cook on medium flame for 5-7 minutes. Do not let it thicken as it will thicken further after cooling.

When cooled, store it in a jar. Serve with food or with poori or paratha. Everyone will like the sweet and sour spicy mango launji.
