Bathua ka saag is a popular dish of eastern UP. It is very delicious, healthy  and easy to make recipe specially in winter. We always make Bahuta Paratha, bathua raita , bathua aloo and bathua Puri  Bathua is rich in iron and calcium and if you get a recipe that is low on fat and tasty too. You can use this saag like a dip, but it is not chutney, though it is made like one.
 
 


Preparation time- 5 min.
Cooking Time- 10 min.

Serving- 2 person
 
Ingredients-
 
1bunch bathua
2-3 chopped green chilli
2-3 chopped garlic cloves
1 tespn chopped ginger
1 pinch turmeric powder
1 tespn zeera
1 tespn oil (mustard)
Salt to taste
Method-
 
Clean bathua leaves and wash them in the running water. 
 
Take a deep pan, add enough water and add bathua leaves. Boil for some 10 minutes or microwave for 5 min.
 I always prefer blanch in microwave to avoid any bathua juice waste.

 

After boiling  Place them in a blender jar and grind to make a fine paste.

 

Roughly chop green chillies and garlic- ginger, keep aside.
Take a  pan or kadhai, add mustard oil and heat it over medium flame. When oil heat, add cumin seeds and cook till seeds start to splutter.
Add  chopped garlic and ginger  and sauté   for a minute and then add chopped green chilli and bathua saag paste.
Add  salt  to taste and and mix well.
Cook over low flame until oil starts to leave the sides of the pan.
Now Bathua saag is ready to serve.
Serve hot with dal-chawal or chapatti or paratha.
