Kheer Recipe takes up significant share in Indian sweets and desserts preparations due to its health benefits, easy preparation and irresistible taste. One such healthy kheer is carrot kheer or carrot payasam as commonly referred in South India. This recipe requires the use of fresh and healthy carrots, which are rich on B carotene, dietary fibers and antioxidants.
This recipe requires the use of fresh and healthy carrots, which are rich on B carotene, dietary fibers and antioxidants. The use of ghee and cardamom powder adds a subtle taste and flavor while the use of condensed milk reduces the cooking time and adds a creamy texture.
This recipe I add bread slices for creamy texture. You can skip this ingredient and you can add condense milk instead of bread.

Ingredients-
2 medium size carrot
3 bread slices
Sugar as per taste
½ green cardamom powder
Dry fruits as per required
½ liter full cream milk
Method
Peel and add carrots in grinder make paste.
Take three white bread slices and trim sides and make fine powder in grinder.
Take non-stick or heavy bottomed pan over medium flame.
Add milk, boil and add green cardamom powder and sugar.
When it starts boiling, add bread powder in milk and mix well. Cook on low flame for approx 2 minutes, stir in between frequently.
Now add carrot paste and mix well.
Cook until it starts to thicken or for around 3-4 minutes, stir continuously to avoid burning of carrot and milk.
When kheer thickens well and turn off the flame. Allow it to cool at room temperature.
Transfer it to serving bowls and garnish with dry fruits and dry rose petals.
Serve carrot kheer warm or chilled according to your choice.
