Kacche Aam Ki Meethi Launji is an instant sweet and sour relish or pickle made by raw mangoes and jaggery. You can say khatta-meetha achar of mangoes. This recipe is a must make when raw mangoes are in season. You can make a big batch and refrigerate for a 2-3 weeks and keep enjoying your meals. This is very quick recipe.
Along with mangoes and jaggery, always I use some Indian spices such as sauf, jeera and kalonji (nigella seeds) and whole red chilli to make this dish more tasty.
There are different recipes to make this chutney in each household and with a little difference here and there, the taste changes slightly, making it a family special.
Serve with roti, palin paratha or any type of stuff paratha.

Ingredients-
3-4 raw mango
1 cup jaggery or gud
½ tspn jeera
1/2 red chilli powder
½ tspn saunf
½ tspn kalungi
3-4 whole red chilli
¼ tspn turmeric powder
½ tspn salt
1 tbspn oil
Method-
Wash and peel green mango and remove the seeds cut in to small cubes.
Heat oil in a pan or oak add jeera, saunf, kalungi and red chilli sauté for a sec.
Add pieces of mangoes and sauté.
Add turmeric powder,red chili powder and salt sauté for a one min.
Now add jaggery and half cup of water and mix well.
Cover it and let it cook for 5-7 min. Stir occasionally to prevent sticking.
After 5 min if mango cubes are not cooked then add more water and again cook till then mangoes are cook.
Switch of the flame and allow them to cool at room temperature.
Aam ki meethi laungi is ready to serve. Keep in air tight container in refrigerator.
