Kathal ki sabji recipe | jackfruit bhuna masala | kathal ki sukhi sabji | jackfruit sabzi recipe. an extremely popular meat alternative curry recipe made with tender or young jackfruit slices. it is considered as one of the premium curries and typically served with a choice of rotis or naan for any occasions and celebrations. young jackfruit slices can be used in different ways to make a curry. But Here I am going to share katahal bhuna masala or jackfruit bhuna masala. It is very common sukhi sabji in UP and Bihar. Its prepare any occasion with poori, rice and dal.

Ingredients-
½ kg katahal cut in to pieces
4 tbspn mustard oil
2 tbspn whole dhaniya
1 tspn jeera
1 tspn pepper corn
1 stick dalchini
3-4 laung
2-3 whole red chili
Bay leaf
1-2 black cardamom
2-3 sliced onion
1 garlic pod
1 tspn red chilli powder
½ turmeric powder
1 tspn garam masala
4 tbps tomato puree
Salt to taste
Method-
- firstly, in a large bowl take ½ kg of raw jackfruit. make sure to soak the jackfruit in saltwater soon after chopping to prevent discoloring.


- Now take oak add coriander seeds, jeera, cinnamon, pepper corn, red chilli, black cardamom, cloves etc, and saute until the spices turn aromatic.




- When masala roast keep in plate and let it cool.


- When dry spices are cooled down make coarsely powder.


- now in a pan heat 2 tbsp oil and add jackfruit pieces.


- fry on medium flame until the kathal is cooked well. keep aside.


- in a large kadai heat 2 tbsp oil. add 2 bay leaf, 1 inch cinnamon, 2 red chilli and 1 tsp cumin. saute until the spices turn aromatic.


- further, add 1 onion and garlic cloves.




- saute until the onions turn golden brown.
- keeping the flame on low add ½ tsp turmeric, 1 tsp chilli powder, 1 tsp coriander powder, ½ tsp cumin powder and ½ tsp salt.




- saute until the spices turn aromatic.
- furthermore, add tomato puree and cook well.




- Now add fried raw jackfruit (kathal) and mix well.
- After that add bhuna masala powder and mix well.


- add 1 cup water and mix adjusting consistency as required.




- cover and simmer for 15 minutes or until the jackfruits are cooked well and flavours are absorbed.



- Add coriander leaf and mix well.
- Now katahal bhuna masla is ready to serve,
- Enjoy with rice, chapatti or poori.
