Rice Kheer is a popular Indian sweet dessert made with basmati rice, whole milk, nuts and saffron. Kheer recipe is easy and is made with a one pan or one pot method. Rice Kheer is basically Indian rice pudding and makes for a creamy delicious sweet dessert.

Here I am going to share of leftover cooked rice kheer.

Kheer from leftover cooked rice is a one such easy and super delicious dessert that can be prepared on day. Kheer fans just need a reason to make it so when they have leftover cooked rice or cook extra rice to make possibly prepare kheer. Kheer is originally made using uncooked basmati rice which actually adds a pleasant flavour and aroma to the kheer. This kheer can be enhanced even more by adding either saffron strands, bay leaf, and nuts according to individual’s preference. So next time if you have leftover cooked rice try making kheer and your family will love it. You can use regular cooked rice but if you have cooked basmati rice then it’s going to turn the kheer more delish.

 

Preparation time- 5 min

Cooking time-30 min.

Serving- 4 person

Ingredients-

Leftover cooked rice – 1 cup

Sugar – ½ cup (4 tbspn)

Milk – 2 cups

Cardamom powder – ¼ tsp

Chopped nuts – 3 tbsp (almond, cashews, pistachios)

Saffron strands – few (for garnish)

Rose petals – 4 (for garnish

Method-

Heat a pan add 1 tspn desi ghee add bay leaf and cardamom and sauté seconds.

After that add cooked rice and sauté one min.

When rice absorb ghee well then  add 2 cup of milk or half litre. Mix well and allow the mixture to simmer for 15 to 20 minutes in low flame.

When the kheer looks simmered add sugar and nuts. Mix well. Reserve little nuts for garnish.

 

Now simmer it for 2 -3 minutes and off the flame.

Keep kheer in fridge for half an hour and take out garnish and serve.
