My vegetarian Man chow pasta soup recipe is super easy to make, This is not manchow soup it’s my version of cooking manchow pasta soup.This hot and spicy Indo-Chinese recipe is so delicious.
This recipe is just 10 minutes of prep and about 15 minutes of cook time. That’s right, friends. I also love how customizable this soup recipe. I added macaroni instead of fried noodles.

Ingredients –
- ¼ cup finely chopped onions or spring onion whites
- ¼ to ⅓ cup sliced or chopped capsicum
- ¼ cup finely finally chopped carrot
- ¼ cup shredded cabbage
- ¼ cup finely chopped capsicum (green bell pepper)
- 1 to 2 fresh red chilies or green chilies (optional)
- 1 teaspoon finely chopped ginger
- 1 teaspoon finely chopped garlic (optional)
- 1 tspnRed chilli Sause
- 2 tspn tomato ketchup
- 1 cup macaroni
- 2 tspn corn starch
- 1 tspn soya Sause
- ½ tspn black pepper powder
- Salt to taste
Method-
- First rinse and finally chopped all the veggies, and keep aside.
- Heat oil in a wok or pan and add the chopped fresh ginger.
- On low heat, sauté for 8 to 10 seconds and then add chopped onions or spring onions. Sauté again for a minute.
- Now add finely chopped capsicum, carrot and chopped cabbage.
- Stir fry vegies on a medium to high heat till the softens.
- Then add ½ cup of frozen corn.
- Stir fry on a medium to high heat for 3 to 4 minutes.
- Once the veggies are stir fried for 3 to 4 minutes, then add soy sauce, chilli sause and tomato keth up, salt and black pepper. Stir to mix.
- Now add 2 cup of water. (you can add vegetable stock if you have).
- Let the soup to come to a simmer on a medium heat. Now add 1 cup of macaroni cover and cook.
- After that Make a smooth slurry or paste of the cornstarch with water.
- Reduce the heat to a low and add the cornstarch slurry or paste to the soup.
- Mix very well and let the soup thicken by simmering on medium-low to medium heat.
- Now manchow macaroni soup is ready to serve.
