Pickled Onions, Sirke Wale Pyaaz, Vinegar Onion is very easy recipe. An authentic Indian pickled onion recipe made with rice vinegar, onion and salt. Basically, the small red onions or shallots are preserved and pickled in vinegar sauce and served as a condiment for lunch or dinner. The recipe is very popular in north India and is generally served in restaurants as a compliment with the meal.

Instant green chili and garlic pickle

Ingredients-
10-12 small onion (pearl onion)
1 inch ginger
3-4 green chilli
1 cup of water 1 cup of rice vinegar
1 inch cinnamon
3-4 cloves
½ tspn whole black pepper
3-4 cut pieces of beetroot
1tbspn salt
Method
Firstly peel the skin of small onions without cutting into half.
Now mark cross without cutting.
Transfer the small onions into large glass jar.
Add silted chili, ginger and salt.
Take a Sause pan add 1 cup of water and add 1 inch cinnamon, ½ tspn pepper, 3-4 cloves and pieces of beetroot.
Boil for 5 minutes or until beetroot turns soft and oozes out the colour.
Cool completely and transfer to the jar.
Also add 1 cup vinegar and close the jar.
Shake well making sure everything is well combined.
Rest for 24 hours allowing to seep the juice into onions.
Now enjoy sirka pyaj and store in the refrigerator and use at least 2 month.
