This Poha cutlet or patties recipe which is made from beaten rice or poha with mashed potato, and ideal party starter or kids snack recipe and it can be easily extended as patties for burger or sandwich recipes.

There are several variation to simple vegetable cutlet recipe and it can be prepared with bread, corn, mixed vegetables and Paneer. This recipe post, poha or beaten rice is used as main ingredient which later pan fried till golden crisp.

It mainly due to the moisture absorbing feature of Poha, which helps to shape the cutlet and more importantly it does not break while frying. Secondly, it healthy and nutrient snack as compared to other vegetable cutlets. As the name says, vegetable Poha Cutlets contain beaten rice and vegetables which is the good combination of and proteins. And thus it makes it a perfect balanced kids snack recipe. This cutlet you can add in lunch box of kids.

Ingredients

                                    Pressed rice (poha) 1 ½   cup

         2 Medium Boiled Potato and mashed

         Oil 2 tbspn for frying

         Cumin seeds 1/2  teaspoon

         Chat Masala ½ tbspn

         1 medium finally chopped Onion

Rice  flour  2 tbspn

Red chilli powder 1 teaspoon

                    2-3 Green chilies finely chopped

                        2 tespn corn flour or refind flour
                           bread crumbs for coating 

Salt to taste

Chopped Fresh coriander leaves 2 tbspn

Lemon juice 1 tbspn or amchur powder

Method-
 

Soak the poha for 5 min in water and then drain the water keep aside  .

Take a bowl add mashed potato, soaked poha, onion, green chilly,  red chilli powder, cumin seeds, coriander  leaves ,chat masala lemon juice or amchoor powder and salt to taste.
 
Mix all ingredients properly to form firm dough.

Divide the mixture into eight to twelve equal portions and shape each into a cutlet.

Make a corn flour or refined flour batter with water, deep cutlets in flour batter and coat with bread crumbs.

Heat sufficient oil in a kadai and deep fry the cutlets till golden.

Drain on a tissue paper and serve hot with green chutney or tomato ketchup.

You can prepare a different shape with help of cookies cutter.

You can add more veggies like grated carrot,finally chopped spinach etc.
