Sooji ki mithai or Rasbhari sweets  is very popular dessert of Indian sweets. It is made with very less ingredients sooji, sugar, and cardamom powder. It is very simple and can be prepared within 20 minutes without much hassle. You can serve this along with your meal or on festivals and special occasions during winter. Ingredients-

 

1 tspn ghee

1 cup semolina

1 ½ cup of milk

½ tspn baking powder

1 tspn maida

1 tspn milk powder

¼ tspn cardamom

4-5 saffron stands or orange food colour

Sugar ½ cup for making syrup

Method-

Heat a  pan add one tbspn desi ghee and fry semolina in ghee for 2-3 min.

Add one tspn maida, one tspn milk powder, baking powder and mix well.

Add milk gradually and stir continuously.

Transfer to semolina mixture in plate and set aside.

Take a pan add one cup sugar and ½ cup of water and boil.

Stir and add cardamom powder and saffron or range food colour.

After one boil cook for 5 min on medium flame.

Remove the heat.

Take semolina mixture and knead 4-5 min.

If need add more milk for kneading.

Make small ball and flate with palm.

 

Heat oil in pan and fry all semolina balls until golden brown.

Transfer the semolina balls in sugar syrup before serving.

You can serve chill or hot.

Garnish with some dry fruits and enjoy with loved once.
