Spring onions are a healthy veggie which is a rich source of iron, mostly used in Chinese preparations. Spring onions have a very unique taste which goes well with potato. The leafy greens of spring onion provide color, crunch and unique taste to all the dishes they are added to. It has lot of health benefits including improving vision, strengthening bones, protect against infection etc. Spring onions stir fry is a simple and delicious stir fry that can be made less than 15 minutes. This stir fry is a healthy way of including spring onions in our diet.  It has a mild sweet taste hence it will be liked by kids too.

Preparation Time-5 min

Cooking time -15 min.

Recipe- stir fry

Serve- 4 person

Ingredients-

Spring onion -1 bunch

Potato- 2-3 medium size

Methi dana- ½ tspn

Green chilli- 1-2

Garlic- 2-4

Sabut lal mirch- 2-3

Oil- 2 tbspn

Turmeric Powder- ½ tespn

Salt to taste

Method-

  • Wash the spring onions along with leaves. Trim the ends of the leaves and chop them in to 1 inch pieces and chop the onions in cubes.
  • Take the pan heat oil and add methi dana once methi dana crackles,then add sabut lal mirch, chopped garlic, chopped green chilli and sauté them for few seconds.
  • After sauté all ingredients add chopped spring onion and chopped potato, salt and turmeric powder and mix properly and cover it.
  • Saute the leaves spring onions and potato together until the leaves get shrink and potato get cooked well.
  • Once it got cooked it will be soft and the colour of the leaves will be changed.
  • Now spring onion with potato stir fry is ready to serve.
  • Serve it triangle paratha, chapatti or hot puri.
