Bhindi Bharwa (achari bhindi) is a delicious dish from Uttar Pradesh. In this dish bhindi are stuffed with a combination of roasted spices along with onions and garlic. Onion and Garlic is just optional ingredient to add in masalas of bharwa. Bhidi bharwa is very tasty and goes very well with dal and steamed rice. Even you can serve with plain paratha or chapatti.

Ingredients—
200 grm small size
2 teaspoon coriander chopped
½ teaspoon chilli powder
¼ teaspoon haldi (turmeric)
1 teaspoon amchur (mango powder)
Salt to taste
2 tbspn oil
½ tspn methi (fenugreek)
1 tspn coriander
½ tspn carom seed
1 tspn jeera (cumin seed )
1 ½ kalonji (nigella)
1 tablespoon saunf (fennel seed)
METHOD-
Wash and dry all bhidis and silted with the help of knife.
Roast all the masala and make a fine powder and keep aside.
Take a bowl , Add haldi, salt, amchur, and masala mixture and mix well.
Now add in chopped coriander, and mix well.
Stuff all the bhindis with this masala. Keep aside.
Heat oil in a pan; add the all stuff bhindis and saute for a minute.
Flip the bhindis till golden brown of all sides. flip occasionally.
Bhidi bharwa is ready to serve.
Serve with dal-rice or palin paratha or chapatti also.
