Vada Pav Recipe with detailed photo and video recipe. A popular Indian street food recipe prepared mainly with Pav bread and deep fried batata vada stuffing. Most commonly, this snack is also referred as Indian burger or aka Bombay burger because it consists from Maharashtra or Marathi cuisine. Generally, it is served as an evening snack, but now we can also be adapted to breakfast.

I always prefer to do innovation with my recipe, because I want to give some twist and some attraction in my recipes.

So, that this Vada pav is something different of traditional vada pav. Mostly in Vada Pav stuff Vada Pav inside of Pav but I stuff of vada upside in pav.

This recipe is much easier and quicker to prepare and assemble it. The critical part The Batata Vada stuffing is mainly made from potatoes without onion or peas combination. Also, it contains a strong flavour of garlic, ginger and coriander leaves. The patties are typically oval shaped as compared to round bonda’s. Having said that, it is not mandatory and can be shaped to round and then later pressed while assembling it.

For batter-

1 cup besan

½ tspn red chilli powder

½ tspn haldi powder

½ tspn garam masala

Salt to taste

For Batata Vada

3-4 boiled and mashed potato

1 tspn ginger garlic paste

3-4 chopped green chilli

½ tspn cumin seeds

½ tspn mustard seeds

½ tspn red chilli powder

½ tspn turmeric powder

1 tspn dry garlic chutney

4 tbspn chopped coriander leaves

Oil for frying

Salt to taste


For stuffing-

8 Pav (ladi Pav) Or (which is available)

Green Chutney (dhaniya chutney)

Tamarind Chutney (optional)

Dry Garlic Chutney

Fried green chilli




First take in a large kadai heat 1 tsp oil and splutter ½ tsp mustard, a pinch of hing and few curry leaves.

Add ginger- garlic paste or chopped ginger and green garlic, and add chopped green chilli and sauté well.

Add ¼ tsp turmeric ¼ tspn red chilli powder and sauté for 30 seconds

After that add 3 boiled and mashed potato and mix well.

Mix well making sure all the spices are combined well with potato.

Add 1 tspn dry garlic chutney and mix well.

Add chopped coriander leave mix well. Now mixture is ready keep aside.


Further, prepare besan batter by taking 1cup besan, 1 tbsp. rice flour (optional), 1/3 tspn turmeric, 1/3 tspn chilli powder, dhaniya patti.


Add ½ cup water or as required and prepare smooth lump free batter.

Now make a small sized ball of potato mixture and take small ball s aloo mixture and dip in besan batter and coat well.

Deep fry in hot oil stirring occasionally. Fry till golden fry remove on tissue paper and keep aside.


Now take heat pan grease with butter and brush  with butter all Pavs and roast Pav in heat and grease pan till some crisp for better taste. (Optional)

now take roasted Pav and cut the upper part with help of knife and make a hole of inside of Pav  and add 1 tsp green chutney, and ½ tsp dry garlic chutney inside of hole in Pav.

Now add small pav inside and keep little garlic chutney on the Pav.

Finally, the Vada Pav is ready garnish and serve immediately.
